Thoughts on canning?

BOY, I sure wish I lived closer to those classes Violet posts about! I need me some classes!!!

Last year I did a light amount of canning, green tomato pickles and green tomato salsa. I had heard that since these items contained vinegar... canning by the bath process was fine.

NOW, I've got my aunt (who's been doing this for years) and other people telling me it's okay to just do the water bath on ALL my canning. What do ya'll think? I DO have access to a pressure cooker, but it's an OLD one.

I don't want to blow up my kitchen... LOL! Or MYSELF!

I'm wondering if I should just freeze the majority of my tomatoes and be done with it! Or borrow a friend's dehydrator and do that.
