Fall Gardening in SE - PA.

I'm in Delaware County. I am looking to start my fall garden now, as my summer garden is pretty well finished. To much heat and not enough water - too many weeds, as well - all a result from a 3+ week hiatus from home for a summer job.

Anyway, I've never done a true fall garden before, but I am excited to try. What plants are best in this region, and when do they need to be started? Secondly, should they be put out as transplants or start from seed?


I currently have seeds for:

cabbage - early jersey wakefield

broccoli - early sprouting purple and Diciccio

rutabaga

carrots - danver's half long

parsnips - all american

beets - detroit red

lettuce - two types of romaine, buttercrunch, red leaf

spinach

snowpeas - mammoth sugar


Can all the root crops stay in the ground throughout the winter, until I am ready to eat them, or do they need to be harvested late autumn and stored?
