When do you plant seeds for lettuce, spinach, and brocolli to have veges in the fall here in southern Pennslyvania?

I am planting spinach and lettuce this week in Berks County. But it's my first year of fall veggie gardening, so I am not much of an expert.

I was going to try broccoli, but the huge number of pests that love broccoli sounded discouraging. I am already worn out by the squash bugs and Japanese beetles.

I want to try bok choi, but haven't found seeds yet. I wanted a dwarf variety.
