Ensete Ventricosum Question

I have had one of these for the last year. Brought inside for the winter put into large pot and it grew to a hefty size. Recently it buckled under its own weight and had to be tied up with twine. I fed it and it still shed leaves. Now i have trimmed back all the leaves but one and am wondering if it can survive. Thanks to anyone who can help!

If you cut all the leaves, it will grow back as long as its still firm. My ensete died back significantly indoors, but its growing back now, and Im hoping it gets somewhere near the size it was last year again this summer.
