Pollen needs to be dried for storage. Collect fresh pollen on a piece of wax paper and place it in a cool dry area overnight. For short term, maybe 3-4 days, just place the dried pollen in a sealed jar in the refrigerator. For longer storage, place the folded paper with dry pollen into some sort of tube or jar that can be sealed. Place a packet of silica gel dessicant (not sure where you would find this?)in the jar with the pollen. You can store in a refrigerator for a couple of weeks, or place in a freezer for up to a year. I'm not sure what the best method is for preparing them for winter.

You can get silica gel on ebay- Or send me your snailmail & I'll give you some. I just bought 2 pounds for a project.. Couple teaspoons are neither here nor there.

You don't really need to do anything to caerulea for the winter- it'll be fine. If you wish to cut it back, feel free- Next year you should get flowers on the new growth, no matter what sixe the plant.
