early growth!

Hi all!! I live in Zone 7, and we've had a ridiculously mild winter so far this season. I planted three bare-root sarah bernhardts in the fall, and they've starting poking through soil!! I planted them 2" down, and the landscapers for my HOA threw down some pine straw a couple weeks ago. I'm guessing that the mild winter has thrown off their schedule, and I'm really stressed that a frost will come and kill the sprouts. What should I do? Just let them grow? Cover with mulch? HELP ME!! :) Thanks!
