Transplanting advice in June

I have a friend who has a lot of huge established peonies in her front garden, and she is moving in less then 2 weeks! She has been told she should take whatever plants she wants, because the new owner is going to pull it all out and do something different... I have offered to pull them and take them.

But... It is JUNE! They are at the tail end of flowering, these plants where HUGE, and the root clumps I am pulling out are HUGE!

The one thing that surprised me with a few of the clumps, is that the tubers seem to be almost vertical, extending down a foot or so! I have never seen this before, and wonder if the original person who planted them layed them this way or something, as i thought they creeped along the ground just under the soil!

They have been flowering very well, but wondering if anyone has any tips for how to successfuly transplant them at this point in time.... Thinking about cutting them back a fair bit, and trying to keep them at the depth they where at... Anything else?
