Well I thought that I would try the same before freezing them, so I coated them in oil, sliced them in half and coated the insides before de-stemming and de-seeding, and threw them into zip lock bags in the freezer.
I have just tried some of these habs and can report success. The individual halves seperated easily from the bunch, they had kept their colour well, and of course they could be chopped immediately without any burning (with such thin skins they pretty much defrost on the chopping board).
