Your plants look fine to me. It is normal for most plants to have crinkled leaves on new growth when trimmed back. They should flatten out as they get larger. I highly doubt you have a calcium deficiency since you are using a commercial potting mix. However if your water is not the right PH then the plant will not be able to take up the calcium that is already there.

Any combination of the following will cause that type of physiological leaf roll;

Cold temperatures, too much water, root restriction.

It's not necessarily harmful though and your plants should be ok.

It seems to me normal.

I'm not sure what causes it, but in my experience, they will grow out of it. Just make sure you don't have aphids or spider mites. They also cause gnarly growth like that. But, overall it looks like it's in pretty good shape.
