I have the nesco (fd-75a) mentioned in the other thread. No pepper use as of yet (I just received it about 2 weeks ago), but I really like it! Multiple rounds of jerky and fruit through it. It works very well, but I learned very quickly that a dehydrator is not a "set it and forget it" type appliance - such as a crock pot. Things will quickly get overdone even at the correct temps if left for too long. My recommendation for sure, if you do indeed to buy a dehydrator.

Nesco is a good dehydrator. However, be aware that drying super-hots in the house can be an unpleasant experience, so move it to the garage or some other ventilated area. Slicing large peppers in half speeds up the drying process too. Takes about 6-8 hours with a RH of 60% in my shop. Pic of the process. Those are mostly Numex habs with a few Ghosts. The habs have a really strong odor when drying...

Tom has some good advice there. Especially if you are and want to stay married. Do not dry super hots in the kitchen. Cutting peppers in half is a very good idea as well.

No "in-house" pepper work for sure. I have an outdoor kitchen setup a/ that's where anything pepper related happens.

Any suggestions on a grinder to turn peppers into dust?

Excalibur 2500 has sure earned its keep here
