Optimal PH level for soil

I purchased a pH test kit for soil that includes a "plant pH preference list" . In the category for "pepper" , it lists a ph range of 5.5-7.0 . I am planting ( tommorrow or the next day) , a wide range of peppers from mild (Italian Golden Treasures & Apaches to Carolina Reapers) and would very much appreciate some feedback on the optimal level...or is it really that crucial??

My soil varies from 6.5-7, and the mild and super hots do fine. In my experience, any soil that grows 'maters well will grow peppers...
