DH never tops his. The varieties he plants always stay neat at about 3 or 4 feet. He makes wire cages for them to provide support.

Indeterminate tomatoes sometimes need to be limited for convenience in harvesting, but I have never heard of an indeterminate pepper.

What zone are you in?

What's your goal? Why are you topping?

Peppers are perennial, so I'd assume that they're indeterminate in that they'll produce crop after crop for as long as the plant lives.

I've never heard of determinant peppers.

The term doesn't apply to peppers as it does to tomatoes. But if you are familiar with the concept then peppers would better be thought of as "indeterminate", as per Josh.

As for topping, you can do it but, frankly, it's not a usual practice with peppers. I will occasionally prune for shape and too-long hangy-down branches, but that's it.
