Reaching plant pepper capacity and overwintering indoors

I have some dwarf sweet peppers in containers and I've heard stuff about picking the green ones so that the plants keep producing well throughout the season. Well my question is how does that pertain to bringing the plant indoors. For instance, if I do not pick the green peppers initially and the plant reaches it's capacity, then I bring it indoors and prune a bit, will it produce peppers indoors and/or next year? How does this all work? I don't want to kill production permanently by not caring for it properly. Or, would that rule even apply to these peppers? They are very small peppers, almost bite sized. I've already got a few dozen on each plant and they've only just begun.

In Dewitt and Boslands "The Pepper Garden" they claim that the fruit load of a plant is determined by the size of the root ball, the size of the main stalks and the amount of foliage.

I cover my peppers in the early Dec depending on weather in a sort of hoop house. Usually the peppers on the plant will continue to ripen but new ones do not usually set on as the light is reduced with the temperature so a few may develop but not many. The good thing of this is I remove my cover about 1st of March and will have peppers by April. They continue until the temperature causes the blossoms to drop. They continue to grow and when it starts cooling down in September, the I will get a bumper crop. This has been the pattern for the last 3 years. YMMV.

So, am I looking for it go dormant or something? I don't want to expose the roots to a low temp because it can stunt the plant permanently, right? Or is that not true of a second season plant? I definately can't just cover mine and leave it out. I have plenty of light indoors, so I don't see why it shouldn't just keep on going...
