Isot or Urfa Biber Peppers & Drying

I'm growing some Urfa Biber (Isot) peppers this year (http://en.wikipedia.org/wiki/Urfa_biber), which sound like they are similar to an Aleppo. There is a method of drying which is repeated many places on the web and I'm not exactly sure what it means:
"The peppers go through a two-part process, where they are sun-dried during the day and wrapped tightly at night. The night process is called 'sweating', and works to infuse the dried flesh with the remaining moisture of the pepper."
I have some guesses of what to do, but does anyone actually know?
