how do you use xanthan gum in hot pepper sauce so that it does not separate? what amount, or measure etc.

ok first off you can break a blender with that stuff!!
I have done it!

But what I do now is that once your sauce is done and in the blender, I use about 1/2 teaspoon per blenderfull!
and you have to add it really really slow to keep it from clumping!
I take a 1/2 teaspoon with blender running and rest it on the edge and let it sift very slowly into tha mix!!

It works great to keep your sauce from separating and suspension!
and it gives a nice shine to the sauce!!
