Hot Sauce

I have two questions on hot pepper sauce: First: I noticed that when blending Jalepeno's to make sauce they are more watery that other peppers, I am trying to avoid thickening agents, any suggestions. Second: must you heat the sauce to 165 degrees before bottling in sterlized bottles, I read many different descriptions about this,thanks.
