When should I pick my thai peppers? I know the cayenne are picked when red also I've been thinking about growing some avenir peppers any advice and info like where to get the seeds. On a side note I took Bruce's advice and planted 11 of my Carolina reaper seeds in peat pellets on Sunday now my fingers are crossed!

You can pick Thai green and red. When red, they have a slightly more tangy, even sweet flavor.

A great simple recipe for a meat or rice dabbing sauce is called "Pepper." Muddle together several green and red chiles, cilantro, salt, pepper, and a splash of lime juice (and fish sauce if you like authentic flavors). Muddle it all together into a semi-paste, then dab your meat and rice into it. Delicious.
