Pretty sure they ripen to red.

They turn red, for sure. I got my seed from store bought package, with few just turning color. I let them sit on the counter and they turned beautiful red. Now I have some red pods on my plants too. But normally they are sold green at Asian markets. Shishito peppers are some of the expensive pepper. Right now they are selling @ $6 per lb.

I had 3 plants last year and I wasn't able to keep up with them, so I would eat a mixture of the two. I preferred the crisper, less sweet green ones, but I wasn't going to let them go to waste, so I would put them in everything, chopped, raw/cooked, didn't matter.

To save seed, let a few turn red and collect from them.

Last year when they really started to ripen (a lot at once) I had no problem finding people at work to take the extra.

You can always freeze some for cooking in the winter.

Holy Smokes! A plethora of useful information for which I'm really grateful once again...(^-^). So I'll be patient for at least a couple of the pods until they turn red. Both the shishito and fushimi plants are pumping and they're still quite small - only a foot or so high. Happy gardener, me.
