Homemade hot giardiniera

At my restaurant we make a pretty good hot giardiniera.

We use carrot, celery, jalape�o, and seasoning with vegetable oil.
Keep it super simple but it's really good.

We make 2 batches sometimes 3 a week and we do not preserve them in jars.

This year we are growing 110 mixed hot peppers
Cayenne, jalape�o, Serrano, hot banana, habs, Tabasco, and few others.

Hoping for a huge couple harvests and would like to make up a few huge batches of giardiniera and preserve them in Manson jars ...

Question is we do not use a preservative In ours of any vinegar ,

So by just putting them into Manson jars and closing tightly will that keep them fresh at room temp for months??

Any help would be great been so busy haven't had much time to research of look into it.
