Mild Jalapeno

I have 6 or 7 mild jalapeno plants, and they set pods great... I have one question though.... When is the best time to pick these? They start off a green color like a normal jalapeno, then turn almost a black/really dark green, and apparently should ripen to red then. But trying some of these bigger pods, green or dark green, they seem to be very similar in taste to a regular bell pepper. Which isn't bad, but jalapenos seem to have that distinct flavor... do they need to sit on the plant until just before ripening to red or start the ripening process?

Wondering what anyone else may recommend that have raised these before. They are beautiful plants, and the pods have a good taste, I was just expecting something different hah.
