My peppers this year. Recipes?

So after a great last year I decided to down size my pepper collection from 30 to 3 for this growing season. I'm growing 1 Bhut and 2 Caribbean red Habs. I have been wanting to ask for some good recipes to use these peppers in. I have usually just made a seasoned salt for steaks and fish and extracted the capsicum from the left over peppers. Would love to hear some ideas! Click on the thumbnails to enlarge.

This is the Caribbean Red Hab

This is a rare pepper I stumbled across during a photo shoot in the woods. I think its in the Cayenne family. Her name is Fiona.
