How to get jalapenos to ripen?

Hi All -

I have a bunch of jalapenos, and they are doing great. The only complaint that I have is that they are corking before they turn ripe. I wanted to get some that were black/red to add color to them when I pickle them. Is there a trick to this? Could I pick before they cork and ripen indoors? If so, how do I keep them crisp/firm?

Corking is a good thing. Sure, it's a tad unsightly, but I kind of like that rustic appearance. I've never noticed any difference in crispness between corked or uncorked.

Regarding color change after picking-- it does occur, but it's not like tomatoes. With Jalapenos, you can pick some that haven't completely turned, but by the time it changes completely, they have a good chance of rotting, turning mushy, or shriveling. In my experience.

If you're looking to pickle red ones in the future, with jalapenos, corking is very prevalent. Not sure about Fresnos, but Cascabella are multi-colored and corking isn't nearly as occurring.

Perfect - I will just let the corked ones ripen on the vine and then pick/pickle those. I got 22 half pints done today, so I'm good to hold off for a while :-). Thanks for the feedback.
