Looks interesting. I've only read about half through it, but, that guy really put together a nice write-up / pics!!

I don't think the seeds really matter. It sounds like anything you want / have will work.

I think it's been posted before, but it deserves to be posted again.
The guide has been updated several times since I first encountered it
a few years ago...so it's definitely worth revisiting from time to time.

Truly, any type of pepper will work.
But for the most believable bonsai impression, you'll probably want a
dwarf or ornamental Chile because the leaves are smaller and more proportional
to the trunk. That said, I'll pot any pepper and enjoy it throughout the winter.

I dig my plants up around November, and I usually have flowers in mid-December.

But I think what I have is an Ornamental Pepper, but I'm really just guessing.
