late peppers....

So I just couldn't resist, I sprinkled some jalapenos and serrano peppers seeds in my garden 7 days ago and they're sprouting as of 3 or 4 days ago (crazy bc when I started them in pots earlier this year, they took forever to sprout, like 7-10 days...didn't use a warm mat though...but by the time it was time to transplant I got paranoid n felt it was too cold still and just sort of did nothing with them and they died...bad mommy!) They're Ferry-Morse seeds, just says "jalapeno M" and "serrano chili" and it only says 75 days to harvest..?? does that mean from lil baby seeds or from the time they flower...? Bc I've read most varieties, unless the early kind, take 120-150 days..? My real question though, is if the temps start getting too chilly in a couple months and they haven't started to fruit, can I do like a reverse transplant...? Container-ify them and let them finish inside with some lights maybe..? Thanks for any insight...
