How do you tell when a pepperoncini is ripe or should I say ready to eat?

I only get the pickeled ones from the store and they are ok.
no heat so i never wanted to grow them but i would say pick one and cut it up and see if it looks done...

Dale, I would go by how big the fruit is compared to what the seed mfg said it would get. These can be eaten or canned in the green stage or the mature stage. It's a personal preference. Find a good recipe for preserving them and you can enjoy them for the rest of the year.

I grew one kind of pepperoncini (greek I think) and it stayed green no matter how long I left it on the plant. I just judged them by size for when they were 'ready to eat'. They have little to no heat so you don't have to wait long till you pick them. I pickled some in a bread and butter recipe, cooked them in a pork chile verde and grilled them on the bbq.
