Let them get red then pull them. That is about the size they grow, so they won't get much larger.

Peppers are edible at almost any stage. But to get a bang for the buck, it is better to let them grow to full size (unlike eggplants and tomatoes). What is full size ? you know it if you have grown it before and according to the variety. One sure way is when they start getting color. Now you have an option to pick or let it get red ( in this case). I pick and enjoy most of my mild peppers young and tender.

Picking them red is best. When green they lack a lot of flavor. And like I said before, the pods are about full grown size in those pictures.

I know New Mexico is torn between green sauce and red sauce. I can harvest these now and roast and let the late season ones ripen to red. Will pulling them increase production?
