What does a green Bhut Jolokia (ghost pepper) taste like compared to a red one? And how hot are the green ones?

Taste...crap.

All depends on the heat. Young ones, although full size, will have little or no heat. The closer they become to turning color, the hotter they will become with peak heat being at full color.
