Not real familiar with the Apache pepper but basically, you should let the pods ripen fully before harvesting if you want to use them to harvest seeds. If the apache normally gets red when rip, then don't pick them until they are good and red. The seeds may still be viable from unripe pods, but if you have a choice, let them ripen. The way I do it is to cut the pepper open, then pull out the seeds along with the "placenta" (whitish part that they cling to). Then set them out on a flat dish where they will get some air circulation and/or slight heat. We are talking less than 100 degrees though. You don't want to bake them. Simple air drying is fine but takes a bit longer. I would let them go a week or more, especially if the seed and placenta is thick. After they are dry, the seeds normally come right off of the placenta with gentle rubbing. Then package them up, keep them in a dry cool location and they can be planted almost immediately or as long as several years from then. Best to use them with in one year though.
