Peppers ripening

I am new to any serious gardening and I planted a decent size, for me anyway, garden, about 300 plants. I have a bunch of peppers and in particular, I am trying to determine the timing of when the Serrano peppers should be picked, they have been on the plant for 3 weeks and I have about 20 of them.
Also, the Cayenne peppers are three weeks old and I have maybe 25 or so that seem to be full size. There is not a spot of red on them yet, how long does it take for them to turn red after full growth?
Lastly, we love the hot peppers and I was wondering if anyone had a reliable source for seeds of the ghost pepper and the various 'scorpion' peppers.
Appreciate any advice in advance.

Serranos and Cayennes (and most other peppers) are tastier if you let them get red. I know that Serranos are fairly long season. Check with the Hot Pepper forum in the fall. There are usually seed exchanges.

Yeah, this is the place to come to for seeds. Once we get our big harvests in people will have seeds to give away by the hundreds so we do organized exchanges. Start making a want list.
