Saving seed from these and ID help?

Just got home from the Farmer's Market with a load of hot peppers including peach habanero, black cayenne, ghost, chocolate habanero and a couple of unidentified. The peach habanero are a solid peach color, but some of the other peppers have not totally turned yellow, orange or red. And the ghost peppers are entirely green. I know that most say to let the peppers ripen on the plant for the best seeds, but I'm wondering if there's a good possibility that seeds from these green or not totally ripe peppers will make plants next year? Any help with ID'ing the others is appreciated. Can see an addiction starting!
