how red do they need to get?

this is one of my bhuts.

I'm told it takes a good month after you start seeing color before it reaches its final red.

well, I first started seeing color last week, now it's pretty red. how much red-der does it need to get before I pick it? I know in theory I coulda just picked it when it was green, and it would still be edible. but I'm looking for optimal flavor.

how long do you think? this time last week it was totally green, now it's a pretty vivid red.

the second wave of brains are showing color too. I am looking forward to picking those soon too. and I just got in 2 orders of hot sauce bottles. I wanna get this party started!

Good for you, man. I think that looks red enough and it should be nice and hot too. just my opinion.

I kinda wanted my birthday present to myself (today) to be some fresh picked ripe bhuts. I just don't wanna pick them until they're actually "ripe"

I walked outside a few minutes ago with a pair of scissors, thinking of saying the hell with it, and picking them anyway. then a bee decided to come at me all pissed off, and that sent me back inside. apparently he didn't think they were ready yet. the bee flew away, and it immediately started pouring down rain. I guess they'll have to wait.

2 more are showing signs of color. and the habs are turning lighter green in spots, which in my limited experience means they'll be turning orange, probably next week.

That Bhut was totally ripe btw.

Also, the Bhut's i've had never took more than a week or so to go from blushing to full red. I suppose it may vary with the different strains and climate / outdoor temps though.

alright, you guys talked me into it.

here's today's haul. 3 bhuts, a brain strain (probably coulda waited a day or two more), one of my fat thai peppers (first time there's ever only been one red one), and more of my mini tabasco than I care to count.

I have not gotten to try them yet. my plan is to roast them on the grill (picked up some applewood chunks just for it), and make some hot sauce. roasted ghost sauce just has a nice ring to it (or, "the ghost with the roast!"). and I am off school for the rest of the day, so I'm gonna do it in a little bit.

of course I'll be cutting off a small piece to try before it goes on the grill. I feel a moral obligation as a grower to do so. I tried a large piece of a green but full grown one, and I could handle it quite fine, so I imagine it won't be too ridiculous.

I intend to take a lot of pictures, and make a thread about it.

I figure 3 peppers in 30oz of sauce is probably just about the right level of heat.

I'll probably do the same with the brains in a few days, I've got 2 more on the plant changing color right now.
