Cayenne Power Not crushed red pepper?

I know this must have been covered many times but just looking for the best way to make my cayenne powder.

I got some cayenee's coming in now and want to get it to the bright red/orange cayenne powder that you buy in stores, not crushed red pepper that was dried as I seen in videos. This is not to say I will not dry them and make some batches of crushed red, but the first batch of about 10 I want to make into that bright fine powder.

I have a coffee grinder from the 80's that still works, a new Blender and my hands to chop.

Thanks again All for the great help and feel free if you have any other ideas with them besides pickling. My other peppers I will pickle.

If this is the type of powder you are looking to make. I cut my peppers in 1/2 then dry my peppers for a few weeks (air dry) then into the coffee grinder.

Many thanks mark, that is what I am looking for. Now for air drying is it best to do outside, in the kitchen or can it be done in the basement? I read somewhere on the net before that the it could irritate the eyes and cause coughing or is that a myth?.

I cut in 1/2 put on a plate and put a paper towel over them just to keep any dust off of them, I then grind it up, let it sit for a few minutes after the grind so the powder settles down. Open the grinder, I may catch a few particles and cough but not too bad. As long as you are careful and respect the pepper you will be fine.

for what its worth.. you can get a deeper red by taking out the seeds before the grind. I've been told by a couple Indian mothers that when they buy chile powder in large quantities, they look for a deep red. they say that the lighter red powders are due to the seeds in the grind, that can take away from the pure pepper flavor.

that being said, I throw it all in my grinds.. i mean, why waste? BUT.. if you are looking for the best/purest flavor, it might be worth a try

    hope this helps, -E
