Those look tasty. Hmmm ripe jalapeno. Why are they always green at the supermarkets?? At least at the markets around here.

Ive never had a cowhorn... how are they?

dijoy - jalapeños have always been picked green, never knew the reason.

SoCarRob - To that point, was going to ask how the flavor differs from ripe to mature in the jalapeño?

They are picked green because they take FOREVER to ripen, and the farmers can't afford to wait. Riper is generally sweeter.

The cowhorns are supposed to have less heat than a jalapeno however I have found that they are much hotter and this red one was hotter than the green ones. I prefer them cooked in a little oilive oil and sprinkled with salt.

Green jalapenos taste..well green. The ripe ones have a nice sweet flavor. But they do take quite a long time to ripen. I prefer the flavor of the red ones though.
