If it's going to be more than a couple days, refrigerate.

Make sure you pull them out every other day or so and rotate the pile so the bottom layer of peppers doesn't sit at the bottom for too long. Don't lock them up in a tupperware or anything...let air get to them.

One week? No problem.

When you're ready to can and If you see any discoloration at the stem end, just clip it with some scissors.
