Peach and Chile Sauce

I've made several batches of this sauce, and I've been tinkering with the chiles I use. This version is much to my liking. Here's the recipe:

PEACH AND CHILE SAUCE

Peaches 2 lb, peeled and chopped

Chiles (seeded): 15 Datils
6 Aji Amarillo
6 Aji Pineapple

Fresh ginger 2 Tsp (tablespoon), chopped
Roasted garlic 10 cloves (peeled and roasted at 400�F)

Dark molasses 1/2 cup
Yellow mustard 1/2 cup
Demerara sugar 1 cup
Apple cider vinegar 1 3/4 cups

Salt 3 Tsp
Paprika 4 Tsp
Black pepper 2 Tsp
Cumin 2 Tsp
Coriander 1 tsp (teaspoon)
Allspice 1 tsp

Put the peaches and chiles into a blender and add vinegar as needed to puree everything. Transfer the puree to a saucepan and add all other ingredients. Bring the mixture to a boil stirring frequently. Transfer to jars, and can in a water bath for 15 minutes.
