What are these spots on my peppers?

So I've been harvesting peppers like crazy the past month. It's my first year gardening and I have to say I got pretty lucky so far. However, I have 6 Poblano plants that I was planning on making chili powder with but nearly all the fruit that is turning\is red has these strange spots on them. I thought maybe it was just a pigment thing, like they were still turning red, but the dark spots go all the way through, you can see them on the inside of the peppers as well:

I did some google searching and it seems to match Stip disorder the best, but I can't for the life of me figure out if that means these should be considered inedible or if they are still usable to dry and make powder with. There seems to be very little information online about this disorder which makes me think I couldn't possibly have it in my little backyard container garden. Any ideas? Once again, it's just on my Poblanos. I have plants from both Burpee and Baker Creek seed stock and both types show signs of this.
