Then get a bond/insurance etc. if you can comply with the above.

Selling home made stuff usually isn't allowed in a lot of places like farmers markets etc.

Could get VERY expensive if you just sell homemade stuff without the proper paper work etc. in order.

I think it stinks that folks need to get permission from big brother before they can sell their stuff

No piece of paper in the world is ever going to prevent some knucklehead from doing something dumb to somebody's food.

Aside fro the REGs and related issues, I think your product needs to have a VISUAL appeal, more than taste and flavor. So in this respect a colorful combination such as red and yellow, with small peppers should be better. I have seen it done with tobasco. I have done it myself(for personal use) with birds eye. ALSO, for visual effect use a very clear white vinegar. Distilled is the best.
