i don't think they are supposed to be dried on the plant. You can pick them and string them and dry them inside. Better yet in a dehydrator, if you have one.
I don't know about roasting and freezing them.

No I was going to pick them, then dry.

As we all know Capsicum grew wild in SA starting around 7000 BC and Mother Nature provided a means of self propagation without outside influence.

In this pic you'll notice the stem is dying, calyx is green and fruit is full bodied.

In this pic you can see the stem is dead, calyx has turned brown and the pod is wrinkled from drying out. The next step is the pod with dried out seeds dropping and the life cycle starting all over again.

Pasilla is a dried chilaca/chile negro.
