I never did Sriracha or Kimchee, but have made kraut and fermented dilled cucumbers. The bacteria involved here can tolerate some reduction in pH, but it should be of their own doing by producing lactic acid. Low initial pH inhibits bacterial growth, including the various species that are involved in the desired fermentation.
