Thai Hots

Just picked a bunch of Thai hots and several Habaneros. I usually can use up the Thai hots but have extra this year. What is everyone's favorite method of preserving. I usually dehydrate of freeze but not sure what is best for the Thai hots.

    Drying?

    IIRC these don't have thin flesh, so they would best be preserved dry or powdered.

    Thai's dry well, like Arbols. Makes good Piri-piri too...

    Thanks, dried most of the other peppers I couldn't use up along with a few of the Thai' s and they did well. How do you keep the dried peppers? Been keeping mine in a peanut butter jar.

    I store mine in paper lunch sacks until I'm absolutely positive they're dry, then ziplocks, or grind to powder in a cheap coffee grinder. I'll often store several varieties in ziplocks until I'm ready to grind and blend them.

    Thai Hots can be easily air dried, with no need for dehydrator. I would save the whole dried pods, to preserve most of the aroma and grind them when/as needed or just crush them.
