they unfortunately won't have that classic bhut flavor since they didn't get ripe. but they will still have plenty of heat. my advice would be to cut them up and freeze them (if you cut them up and put them in the freezer on a plate, then when they're frozen transfer them to a bag so they're not frozen together as a big lump) and add them to foods you want to be spicy. again it won't have that awesome flavor, but the flavor isn't BAD when green (just not as awesome as it woulda been if it had time to ripen), and it'll still have plenty of heat.

If any one is full size, leave it out on the counter for a while and you may start to see it color. Peppers will often ripen on the counter.

Or just leave them on the plant. They're not going to damage the plant.

I believe they are full size. I only got 5 on the plant and this is my first year growing these.

I like the idea of ripening them on the counter. My goal is to over-winter the plant so I don't want to burden it more than necessary. I can't believe I let it get frosted:(

Good suggestion. About a month ago I bought some Serrano. Some of them were sitting on the counter and amazingly they turn nice red. So did pepperoncinies.
