Chimayos are extremely seedy (compared to many Anaheims) so you're going to have a whole lot more than a lot of seeds.

Tasty pepper...very seedy, though.

When it comes to toms for salsa, it's up to personal preference since you're not looking to cook it down to a thick texture (even then it's only a matter of longer cooking time if you use a "non-ideal" tom that's more watery).

It mainly comes down to acid vs sweet balance and what you prefer out of a tomato. There's other flavors behind those 2 aspects, but that is the dominating dividing line for most people. Most paste tomatoes will contain less water and be sweeter...and that's what most people use. It's up to your personal tastes, though.

I used Roma with great success!
I'm sure many other types would works as well, I would like to hear them too if anyone else has a favorite.

I almost forgot! I would like to grow some chimayos to make some milder hot sauces, so I'll take you up on the seed offer.
