I would suggest pickles. There are a lot of recipes on the Pepperfool website. I saved a bunch before we had a hard freeze 2 nights ago. I like to stem and seed mine before pickling. Many people don't do that. It is time consuming.

Many people freeze peppers. I don't. One reason is that they lose crunch and are mushy when thawed. But they're still good in soups, etc.

If I was to freeze, I would blanch and shock them first. This stops enzyme activity that degrades veggies as they freeze.

I do what you(and John11840 do -- make gallon size jars of hot carrots. Again, I blanch and shock my veggies. Simple, tasty, uses up plenty of peppers, and lasts for months until the next summer.

make hot sauce. I find jalapenos pretty boring, so I don't really have any recipes to offer for those, but I am certain some can be found on the web.

I did some pickled Jalapeno Hot Rings for the first time this year.

Lets just say, I will no longer grow and pickle peppercinis. I am thru with them.

Pickled jalapenos from here on out. Jalapenos got more meat and crunch to them with a little hot kick.
