Fermentation

Hello all,

I want to do some fermentation with a few varieties I have. Where is the best place to get a Fermentation "kit"? Also, if anyone has the experience or know of a good site to learn from please let me know. I have never done this, just want to try.

Also, for you that do have experience, is it okay to Ferment with frozen peppers or just fresh pods?

I can't offer any "expert" advice as I'm attempting my first ferment now.

I'll second what Bill has given you. That's a very good guide. Rocketman is really knowledgeable, and he was very good replying to questions I posted online when I did my first fermentation last year. It was a mix of Cranberries, Pears, Congo Trinidads, etc., and it turned out well. I let it go about 4 weeks. Got a lot of funky looking Kalm yeast, looks gross, but no ill effects.

Also new to fermenting and also a fan of Rocketman's 101. My "oldest" mash is only 18 days along.
