My only experience with it is using Caribbean Red Habs, which I loved. But honestly to me all the other flavors really standout.

Scotch bonnet is used in all sorts of Caribbean cuisine, including the well known jerk chicken (or jerk pork).

A co-worker of my SO - from the Caribbean - was absolutely enamored with the mesquite-smoked ripe Serranos the SO makes for his rubs and jerk pork, beef or chicken.

The co-worker did competition BBQs and the serranos gave the heat and a certain smoky flavor that nothing else was giving him.

I've used Chocolate Scotch Bonnets to make Jerk sauce twice in the last several months.

In my opinion, it is the Allspice that makes the Jerk distinctive from both a smell and taste perspective. I guess using some kind of smoked pepper would also add a different element to the taste profile.

I grill Habaneros over mesquite, but I add red bell peppers to the grill to extend the sauce, rather than use carrots or some other vegetable. I am not interested in making it as hot as possible - I want to make it edible.

Not "traditional" jerk peppers, and a good bit hotter than typical, but I really like the peppery bite of the 7 Pot Red.

with regard to heat, the UNM Chili Pepper Institute ranks heat levels a bit differently than stated by some in this thread.

I make a lot of jerk. I'm mildly obsessed with it right now. I prefer to use brain strain 7pots or moruga scorpion. scotch bonnets are the traditional choice though.

I second Scotch Bonnet. That is what I have heard. SC, I think is a Caribbean pepper, used for jerk sauce. I have read here before that it has a unique flavor. I might be wrong.
