newbie - red jalepeno question

Hi all,

Newbie here... bought a house this spring and got a late start on my first attempt at growing habeneros and jalepenos...had to bring them inside before they were ready but have them under grow lights now. Habs have been terrific (and HOT) so far, probably have 30 more on the stem which should be changing color soon. My question is about the jalepenos... they had been staying green for such a long time, and FINALLY this morning I went to check them out and 2 of them are turning red. However, they also changed from nice and firm to slightly soft with the color change. They aren't mushy, but soft.

My question is... is the softening just a normal part of their ripening with turning red, or are these somehow over-ripe even though they didn't change color until today? Would you still eat them? Since this is my first growing attempt I wanted to wait for some to turn red to compare tastes, but I will not do that if I am going to lose them.

Thanks everyone!
