Entire young veggies eaten at night

Hello! I live on the outskirts of Las Vegas. It's still very cold here, 30's at night. Something is eating my young veggie plants from just above ground level. Onions, cilantro, broccoli. The whole plant is gone, about 3 inches tall. I can't find any burrow holes. I've dug deep and wide searching for cut worms, grubs, anything! Definitely not rabbitts. I can't find a single leaf or stem of the plant, it's just disappears. About 3 plants a night. My garden is very large and we get high winds. I know I can row cover, but that will be an extensive job. II thought maybe lizards, but I don't have any that I can find. Chipmunks? Mice?
