Rot on Corkscrew Vine

.Hi, I have a Corkscrew Vine that is about 10 years old. It is in a container because I have to bring it in in the winter. I have several other plants that have to come in and they are fine. I took the Corkscrew Vine out of the pot and there is a big tuber?root? that is a bit soft and the top of the plant is pink and pulpy inside. I took off as much as I thought I could without hurting the plant - not knowing what I am doing - but can I cut it below the crown to where it is hopefully healthy. I am letting it dry out but don't how the roots will be if they dry out. Thank you for any help.
