Umm, the edge of the pot is in good focus. So try moving a smidge closer to focus on the critters.

Any chance of fishing out a few of the critters, then set them on plain paper to get a clear picture. (Hint: use a pastel color rather than white. )

I may be wrong, but I think it's a spider mite. They seem to grow on these types of plants. Anyways, they are damaging them. The first two leaves on at least 4 or so plants are being eaten and they are dying. One plant seems almost dead. I'm trying to capture one.

Not a picture of a spider mite, which are almost microscopically small. If you put one in a container and freeze it for a while, it will stay still enough for you to take a good picture. It almost looks segmented like a sow bug or relative. That would make sense if you're seeing these around the pot and potting mix.

That medium looks more like coir, to me. A peat pellet stuck into coir. Probably not the best scenario.

Spider mites are so small most people can't see individual mites -- though a whole crowd of them will show up as a reddish color on the underside of the leaves. They turn leaves a spotty green and white.

I'm not sure what you mean by "leaves being eaten." But if you see pieces of the leaf missing, it's not spider mites.

Could you show photos of the damaged leaves and dying plants?

If the leaves are being eaten, that supports the guesstimation that they might be pillbugs/sowbugs. Freeze a couple, then set up a picture as Jean suggested.

Isn't that what's on the edge of the pot - a "pill bug?" They will definitely eat leaves. Are they pepper plants?
