Grasshopper. Locusts are grasshoppers with very bad manners.

Grasshoppers are phytophagous (plant eaters) from the time they hatch until they die. They often seem to be present in large enough numbers to be considered a pest, but sometimes you'll only see a few over the entire growing season.

Grasshoppers could very well be what's eating your mint leaves, by the way.
